Dried Apricots (sukhi khoobani) 200 grams (soak them in water overnight)
Sugar ½ cup or to taste
Water ¼ cup
Almonds ½ cup
Milk 400 ml
Vanilla custard 2 and ½ tablespoons
Milk 100 ml
Cream for garnishing
Wash and soak dried apricots overnight and strain in the morning.
Deseed them and break the kernels to collect almonds.
Now, in a pot/wok add dried and soaked apricots, sugar and water.
Cook and mix until the sugar dissolves.
Let it simmer on low flame for 10-12 minutes until the apricots get soft.
Add little water and mix, cook it for another 2-3 minutes and turn off the flames.
Once it has cooled down a bit, using a hand blender to blend the mixture until smooth.
Now, add the almonds collected from the apricots kernels, mix and let it cool.
(Tip: you can use packet almonds as well and cut them in halfl)
Next, in another pot add milk, sugar and bring it to a boil.
Whisk until the sugar has dissolved.
In a half cup of chilled milk, add vanilla custard, mix and pour it in the boiling milk and stir continuously.
Set aside to cool down.
In a serving bowl, add the khoobani mixture and custard.
Repeat the layers and top it off with some crushed almonds and cream.
Refrigerate and serve!
